Description:
Ruby color. Delicate, characteristic bouquet reminiscent of sour cherries and wild berries. Mineral, dry, velvety taste with good structure.
Grape variety:
85% Corvina Veronese, 10% Rondinella, 5% Corvinone – Veneto Valpolicella DOC.
Production area:
Hilly area of classic Valpolicella, facing south-east and south-west, 250 - 300m a.s.l. Predominantly chalky, calcareous soil, rich in skeleton.
Vinification:
After manual harvesting of the grapes, destemming, maceration and traditional maceration for 10 days in steel tanks take place. After alcoholic fermentation, the wine is separated from the skins by gentle pressing. The storage takes place in oak barrels for about 12 months.
Food pairing:
It goes well with pasta dishes, red meat, roasts or grilled dishes.
Serving temperature:
16 - 18°C.
Ageing potential:
more than 8 years.
