Description: 
Quite dark ruby red with garnet reflections. Showing a special bouquet; cherries, precious woods, mocha, earl grey tea notes, deep and spicy. On the palate the wine shows power, supporting astringency, black berries and inside a lot of race peppery notes, it slumbers an aromatic that reminds of old, great Canon vintages 30 years ago. A very great wine from this winery that has long been known for its modest qualities.

75% Merlot, 25% Cabernet Franc - Saint-Émilion AOC.

Vinification: 
Grapes are selected exclusively by hand to weed out inferior fruit that could affect the premium taste of the red wines. The maceration takes place in steel tanks, while the ageing of the wines is carried out in oak barrels. In recent years, many investments have been made to extensively modernise the technical facilities in order to produce red wines that meet the quality standards of the successful French company. 

Food pairing: 
Great companion to braised meat, entrecôte, rump steak, black truffles and côte de bœuf. Equally suitable with lamb gigot, confit de canard and hard cheeses.

When the privateer Jacques Canon bought the estate on 2 April 1760, he could not have imagined that 250 years later it would be known worldwide for its wine, which is one of the best Premiers Crus. 

He left it his name, which has now gone down in history. When CHANEL acquired the estate in 1996, they decided to invest in restoring Château Canon to its full potential for producing Premier Grand Cru Classé wines. The vineyard, the wine cellars and all the buildings were given their present appearance. The most recent building is the 18th century residence, which has been completely restored to the highest standards by architect Peter Marino. This is no ordinary château. It is a house, a family chateau, passed down from generation to generation. In winter, the fires crackle in the fireplaces. In summer, lunch is taken by the ornamental pond in a sheltered garden shaded by holm oaks.
