Description:
Deep ruby color. Intense, fine and persistent bouquet with notes of sour cherry and plum. Harmonious and velvety taste with good structure.
Grape variety:
85% Corvina Veronese, 5% Rondinella, 10% Corvinone – Veneto Valpolicella DOC.
Production area:
Hilly area of Valpolicella, south-east and south-west exposure, 250 - 300 m asl. Predominantly chalky, calcareous soil.
Vinification:
The grapes are crushed and destemmed and macerated in stainless steel vats for 10-12 days. Once the alcoholic fermentation is complete, the wine is separated from the skins with a gentle press and stored in steel tanks until January when the dried grapes are pressed into Amarone. At this point, the Valpolicella is "diverted" (ital. riapssato) on the Amarone pomace for 7-8 days at a temperature of 25-28°C. This is followed by 18 months of storage in tonneaux and a few months of bottle refinement.

Excellent accompaniment to game dishes, grilled and roasted meats, cured meats and aged cheeses.
Serving temperature:
16 - 18°C.

more than 8 years.
