Production area:
Valle Isarco 550 - 650 m. a.s.l., very deep, fertile clayey soils with high water retention capacity.
Vinification:
Delicate crushing after a short period of contact with the skins, controlled temperature fermentation half the time in large acacia wood barrels and the other half in stainless steel tanks, no malolactic fermentation, 7 months of lying on fine lees.
Ageing potential:
more than 8 years.
Matching:
light appetizers, cold meats, egg or mushroom dishes, freshwater fish and poached shellfish, excellent as an aperitif.
Serving temperature:
10 - 12°C.
