Description:
Brilliant ruby red in colour, it has a bouquet of good breadth and discreet persistence. The scents are vinous when young and then change with ageing to ripe plums on a slightly herbaceous background. The taste is dry, soft, balanced with a pleasantly bitter end. Good aromatic persistence expressing great elegance.
Grape variety:
50% Cabernet Sauvignon, 40% Merlot, 10% Carmenère - Trentino IGT

San Leonardo locality - Borghetto A/Adige - Avio (TN)
Vinification:
Destemming and soft crushing of the grapes with low sulphur dioxide content. Fermentation and maceration of the marc for a long period with repeated daily foliation. Cold pressing of the must by natural decantation. 80% is aged for 18 months in large 60 hl Slavonian oak casks and 20% in barriques for at least 6 months. Matured in bottles for at least 6 months before release.
Food pairing:
Classic table wine, both with first courses with red or dark sauces, and stuffed pastas, as well as with main courses of grilled meats, white meats and soft cheeses.
Serving temperature:
16 - 18°C.
Ageing potential:
more than 5 years.
