Description: 
In the glass it has a rather intense garnet red color with light purple hues. The nose reveals aromas of small berries, balsamic hints of eucalyptus and mountain herbs, sweet notes of cocoa on the finish as well as delicately spicy nuances, almost shadowy hints of undergrowth and humus. Harmonious and enveloping on the palate, with a well-ripened fruit, a subtle tannic texture and a pleasant final freshness. The red "Fihl" by Peter Dipoli is a pure Merlot of great expressive authenticity. Straightforward and direct, it expresses the classic aromatic structure of Merlot with great finesse, elegance and the typical freshness of mountain wines. 

Grape variety: 
Merlot - South Tyrol Alto Adige DOC. 

Production area: 
FIHL is the ancient name of a locality north of Neumarkt/Egna which today is known by the name of Villa. The winery is located in "Villa", while the vineyard that produces this wine is located in the locality of Gries, on a gentle slope facing west with sandy clay soil with gravel. In this area, in fact, Merlot has found the soil and climate to express itself at high quality levels. Usually, a part of the wine destined for Iugum (Merlot or Cabernet Sauvignon) is added to the "Fihl" before bottling. 

Vinification: 
After hand-picking, the grapes are carefully destemmed and fermented in open steel vats for about 10 days. In this period two daily punching down are carried out. The wine undergoes malolactic fermentation in steel barrels and subsequently around 20% matures in new barriques and the greater part in old, multi-filled barriques. After 12 months of barrel ageing, the wine is bottled and remains in the bottle for another 14 months before being released for sale. 

Food Pairing: 
It is a great accompaniment to red meats, hearty first courses and blue cheeses.

16 - 18°C.

more than 10 years.

I wanted to make wines that would reflect my ideas about which grape varieties to use, and about the most correct and respectful ways of turning them into wine. I believe that each grape variety should be planted in the environment that best suits it. The producer’s job is to transform the grapes – as naturally as they arrive from the vineyards – into wines that express the characteristics of soil, habitat and growing season these grapes are a fruit of.A respect for these factors precludes all predetermined styles of wine, too often produced following momentary fashions. I am happy when consumers understand a wine to be the result of specific growing conditions, with whatever natural variabilities these may entail. Only then they can appreciate a great wine as being a unique and true expression of a grape, its territory and its producer.
