Description:
Straw yellow with obvious greenish highlights, it has excellent luminosity. The bouquet is intensely perfumed, with particularly fragrant, floral and fruity sensations. Notes of acacia and yellow rose, white-fleshed peach and a clear almond aroma, typical of the Verdicchio grape variety, are present. The finish has a light vegetal touch. The flavor is distinguished by the complexity of aromas, persistence and above all by the important savory stamp that will determine duration and elegance in its evolutionary capacity; in the finish, fresh and enveloping, a pleasant citrus scent emerges.

Verdicchio - Castelli di Jesi DOC
Verdicchio is a white grape variety cultivated almost exclusively in the Marche region, with a decidedly eclectic nature it is used to produce both fresh and ready to drink wines, and very structured wines capable of remarkable longevity as well as sparkling wines (both classic and Charmat methods) and passito wines.
The name verdicchio is clearly derived from the color of the berry, which retains obvious shades of green even when fully ripe.
Production area:
The vineyard covers an area of 2.5 hectares on medium-textured sandy soil with south/southeast exposure at an altitude of 350m above sea level. The vines present the Guyot form of ellevamento with a planting density of 3,864 plants/hectare.
Vinification:
Manual harvesting in bins. Soft pressing of the grapes with selection of the flower must. A small percentage of the grapes undergo cold pellicular maceration. Alcoholic fermentation in steel tanks at controlled temperature between 14 - 16°C for a period of 10 - 12 days. Malolactic fermentation not carried out. Aging in steel tanks with frequent batonnage for a period of 6 - 8 months. Bottling in the summer following the harvest. Bottle aging for another 3 - 4 months before release for consumption.
Food pairing:
Pasta with vegetables, fish tartare and carpaccio, seafood risotto, sushi and sashimi, pasta with fish, fried fish, fish appetizers, grilled fish.
Serving temperature:
10 - 12°C.
Ageing potential:
more than 5 years.

In the 1960s, continuing the farming traditions of his father Armando, Argilio Mattioli founded a small family business, a reality built on passion for work and respect for the land. Initially oriented towards the production of Verdicchio grapes, wheat and oil, with the generational transition it broadened its horizons and entered the world of oenology.
The construction of a modern, organically run winery completely immersed in the vineyards was the natural completion of a project aimed at preserving and enhancing the value of the grapes, which can thus be processed just minutes after their harvest.
Starting from the earth and arriving at the bunch of grapes allows to produce quality wines with a strong territorial connotation.
