Vinification:
Delicate crushing after a short period of contact with the skins, controlled temperature fermentation half the time in large acacia wood barrels and the other half in stainless steel tanks, no malolactic fermentation, 7 months of lying on fine lees.
Ageing potential:
more than 8 years.
Food pairing:
soft cheeses, fish, white meat dishes.
Serving temperature:
10 - 12°C.
