Description:
Shows a deep ruby red colour. Aroma with an enveloping olfactory spectrum with pleasant notes of red fruit, black cherry, blackberry and plum. Rich, savoury and mineral flavour with dense tannins that give it a pleasantly long finish.

Corvina Veronese - Veneto IGT

Production area:
Sant'Ambrogio di Valpolicella, Costalunga estate in hilly area, 350 metres above sea level, south-facing. Mainly calcareous morainic soil, rich in skeleton and with presence of clay.

Vinification:
the grapes, after harvesting, are destemmed and crushed. This is followed by a slow fermentation in contact with the skins for about 15 days at a controlled temperature of 25 - 26°C. Maturation then continues for 24 months in French oak tonneaux. This is followed by a long bottle ageing for at least one year.

Food pairing:
goes well with all tasty and rich recipes. Ideal with grilled meats, roasts, game and cured meats, as well as mature cheeses.

Serving temperature:
16 - 18°C.

Ageing potential:
more than 10 years.
