Description

Description:
This stunning red exudes bright cherry, blackberry, plum, iron and tobacco, aromas and flavors, all knit together, almost seamlessly, with vibrant acidity and refined tannins. Shows a combination, of power and grace, with a long fruit and savory aftertaste.

Grape varierty:
100% Sangiovese Brunello di Montalcino Riserva DOCG

Production area:
A completely unspoilt landscape with galestro, clay and albarese soils, from which fossils and shells emerge, evidence of an ancient coastal seabed. The wines produced here are fresh and fruity, incredibly fragrant, moderately alcoholic and of unequalled refinement, with a salty note and a dynamic, vivacious character.

Vinification:
The fermentation takes place in stainless steel tanks with a short initial cold maceration period (below 20 ° C) on the skins for about 15 to 20 hours, followed by a maceration on the skins, which can last up to 24 days. Malolactic fermentation begins naturally and lasts about 10 days. During this time the wine is clarified by natural sedimentation. The wine then matures for about 36 months in oak barrels and 24 months in the bottle in the air-conditioned cellars of Castello Romitorio before it is put on the market.

Food Pairing:
Braised red meats, roasted and grilled meats, game and aged cheeses.

Serving temperature:
16 - 18°C.

Ageing potential:
over 15 years.

Bottle to:
750 ml - 75 cl - 0,75 lt.

Allergens:
contains sulphites.

Producer:
Castello Romitorio
At the beginning there was a temple, a fortress and a monastery. Then a castle, mansion, protection for herds and finally an art workshop and a wine cellar. From the Etruscans to the Romans, Castello Romitorio is a place where time has a physical, tangible dimension. Where wine lives from history, and history tells of a thousand years of passion for this place, which has always been dedicated to wine production and had an important strategic role in the transit of commercial goods.
