Production area:
A completely unspoilt landscape with galestro, clay and albarese soils, from which fossils and shells emerge, evidence of an ancient coastal seabed. The wines produced here are fresh and fruity, incredibly fragrant, moderately alcoholic and of unequalled refinement, with a salty note and a dynamic, vivacious character.
Vinification:
The fermentation takes place in stainless steel tanks with a short initial cold maceration period (below 20 ° C) on the skins for about 15 to 20 hours, followed by a maceration on the skins, which can last up to 24 days. Malolactic fermentation begins naturally and lasts about 10 days. During this time the wine is clarified by natural sedimentation. The wine then matures for about 36 months in oak barrels and 24 months in the bottle in the air-conditioned cellars of Castello Romitorio before it is put on the market.
