Description:
This cru produces Barolo with great structure but with elegance and complexity. Initially fruity, then floral and then again spicy, open and intense aromas. Generally of exceptional suitability for ageing.

MGA Bricco Boschis - Nebbiolo da Barolo 100%, from the San Giuseppe vineyard.
Vinification:
Vinification with natural yeasts, semi-immersed cap maceration for 22 - 38 days. Traditional ageing in Slavonian oak barrels for 4 to 5 years. Maturation in bottles for one year.
Food pairing:
Red meats in general, grilled or raw shellfish, grilled white meats, hard or mature cheeses, chocolate.
Serving temperature:
16 - 18°C.
Ageing potential:
more than 20 years.

The vines of the Cavallotto Winery are found on a hill, the Bricco Boschis, where sedimentary deposits of the Langhian and Tortonian ages meet. The secret of Cavallotto Barolo is truly here: the older calcareous marl and the younger sand veins (through which water flows and hydrates the plants) give us wines of great equilibrium and aromatic complexity. This is a unique characteristic in the Barolo zone, and herein lies the real identity of the wines of Cavallotto.
