Description: 
this Red Edition is a selection of the best Barriques after a year of ageing in barrels, which is matured for another year. It is a signature red creation of Amistar Edition. Complexity and intensity in fruit and palate make this cuvèe a very special red quality for the most demanding ocassions. 

Uncompromising care of the vineyards and vinification are indentified with this family name. An optimal harmony between growth and production per plant. Only perfectly ripened grapes and balanced ageing are the essential parameters. Amistar is a philosophy. It is born in the vineyard and is completed with pleasure in the glass. 

Grape varierty: 
Cabernet Sauvignon, Lagrein, Merlot, 5% Cabernet Franc, 5% Petit Verdot - South Tyrol DOC 
This selection is a vintage cuvèe that has approx. 10% grapes dried in the vineyard (on the vine). 

Production area: 
Various vineyards in different areas between 250 and 450 metres in Laives, Caldaro and Termeno. Soil: Clay to stony and sandy soil. 

Vinification: 
Traditional vinification of individual grapes. The grapes are destemmed and crushed. Fermentation on the skins in stainless steel at controlled temperature. Here the Salasso is specially made to have more skin on less must. This concept together with the grapes dried in the vineyard (= which are vinified separately and added at the end) is the goal of the Amistar philosophy. After fermentation, each individual variety is first racked and pumped into stainless steel. After fermentation, all varieties are racked and pumped directly into barriques for malolactic fermentation and maturing for approx. 24 months. 

Food pairing: 
this Edition is ideal for very large meals such as T-bone steaks, roasts, game and with well-aged cheeses. Another interesting combination with this Amistar cuvèe is dark chocolate.  Very interesting is the combination with cigars.

more than 15 years.

The expression of the wines comes from the two microzones Oltreadige and Bassatesina. The philosophy in the vineyard is aimed at the 3 lines I Vigneti, DeSilva and Amistar.In the DeSilva: old vines that have the aim of making only the expression of the land speak. Amistar: speaks of the expression of the family to remember the origins. A special dimension - in the fruit and in the palate they are underlined by the choice of partially dried grapes on the plant and by the selection of areas and special grapes that describe the White and Red Cuvèe.
