Fresh bergamot puree 1kg is made from 100% bergamot from southern Italy. 

Bergamot is an acid citrus fruit from the bergamot tree, a hybrid tree between the green lemon and the bitter orange tree. This fruit has Asian origins but is nowadays cultivated with great success in southern Italy. A small tree three to four metres tall, bergamot appreciates the warm Mediterranean climate and its fresh, savoury notes evoke the terroir of the Riviera. The best bergamot essence is extracted in southern Italy, where 95 per cent of the world's production is naturally found. 

Fresh bergamot puree has a very persistent flavour profile in the mouth with pronounced acidity and bitterness.

How to use fresh bergamot puree ? 
All purees are perfect for making mousses, sorbets and ice cream, desserts, cocktails or cool drinks. They are also suitable for making smoothies and fruit juices. 

We recommend you try the Bello fresco from the Globe restaurant and cocktail bar in Milan, a non-alcoholic cocktail that is a real fruit concentrate. Add bergamot puree, kalamansi puree, polpelmo puree and yellow plum puree in a glass. Shake and pour the contents into a glass with ice.
