Production area:
Valle Isarco 400 - 700 m. a.s.l. gravelly, skeleton-rich alluvial soils containing diorite and quartz phyllite.
Vinification:
Delicate processing and crushing, controlled-temperature fermentation and ageing on fine lees in stainless steel tanks, no malolactic fermentation.
Ageing potential:
more than 5 years.
Food pairing:
prawns, crabs, crayfish, lobster, paté de foie gras, dishes au gratin, spicy cheeses, and as an aperitif.
Serving temperature:
8 - 10°C.
