Description: 
The extended aging on the lees highlights the minerality of the terroir, releasing aromas reminiscent of flint and fresh white fruit, complemented by hints of bread crust, licorice, and ginger. On the palate, the fine carbonation tickles and awakens the taste buds, imparting extreme freshness and liveliness; the flavors are incredible, almost reminiscent of Chardonnay Champagnes from the Épernay region.

Grape variety: 
100% Chardonnay - TrentoDOC Riserva

Production area: 
The only vineyard in the ‘Costiola’ area. The soil consists of glacial deposits containing sub-rounded polygenic pebbles set in an abundant reddish silt-clay matrix

Vinification: 
Gentle pressing of whole grapes at a temperature below 18°C, with a maximum must yield of 55% by volume/weight for the Chardonnay. Ageing of the sparkling wine base in stainless steel. Sur lie for 114 months in the underground cellar, where seasonal temperature fluctuations range from 12°C to 20°C.

Food pairing: 
A truly special sparkling wine, perfect for special occasions, which should be paired with dishes of equal aromatic complexity and refinement; it has a medium body, ensuring a harmonious balance of flavours.

Serving temperature: 
5°C sinking. 

Ageing potential: 
more than 5 years.
