Description: The Vino Nobile Riserva is produced exclusively in exceptional vintages, when the grapes from the old vineyards are carefully selected and vinified separately. The longevity of this wine usually requires that ageing in wood is followed by an important period of ageing in the bottle. This is necessary to achieve a perfect balance of all its components.
Grape variety: Mainly Sangiovese and Canaiolo Nero - Vino Nobile di Montepulciano Riserva DOCG.
Production area: Municipality of Montepulciano - Sanguineto, Bossona
Vinification: Vinification in steel tanks at controlled temperature between 24 and 28°C. Maceration on the skins for 20 - 25 days. Daily pumping over and délestages at the beginning and in the middle of fermentation. Spontaneous malolactic fermentation in temperature-controlled steel tanks. After a maturation period of 15 - 18 months in 500 l French oak tonneaux and/or in 30 hl Slavonian oak barrels, the wine is refined in the bottle for another 12 - 25 months.
Food pairing: Textured and spiced dishes, it pairs perfectly with pasta with game, mushroom or truffle sauces, grilled and braised red meats, baked or braised game, roasts and aged cheeses.

Producer: Valdipiatta Winery Tenuta Valdipiatta is an estate vineyard and winery in south-eastern Tuscany, in the heart of Italy’s Vino Nobile di Montepulciano region. Montepulciano has over 2,500 years of wine-growing history. Its red wines are made from Italy’s signature red wine grape, the Sangiovese, or ‘Prugnolo’ as locals call it here. Valdipiatta has always been family owned. It was founded in the 1960's by the original owner and subsequently acquired at the end of the 1980's by Giulio Caporali, who fulfilled his dream of living in one of Tuscany's most beautifully preserved, rural environments while making his own wine. In 2002 Giulio handed the running of Valdipiatta over to his daughter Miriam. Miriam was well prepared, having studied business in Rome and winemaking in Bordeaux. "What I learnt there was that smooth-tasting wines with unique and interesting flavours could only be made with environmentally respectful grape-growing and sensitive winemaking", Miriam says.
