Description: Gentian bitter is completely sugar-free and, as it is not filtered, is somewhat cloudy and, depending on the nature of the roots, has a soapy grey or light brown colour. It has an intense scent of green roots and fresh earth. At first, the taste is surprisingly 'bitter', 'hantig', as they say in South Tyrol, but after a short time it transforms into a 'pleasant, full-bodied bitterness' that fills the whole throat and that one would like to feel for longer. Here, too, the earthy character and intense aroma of fresh roots emerge. The finish is not overpowering but (very, very...) long and persistent.
The pleasantly bitter extract of the yellow gentian root unfolds its beneficial effect both as an aperitif and as a digestive. Harvested from the rugged slopes of the South Tyrolean Dolomites, it transmits the primordial power of the mountains directly to the soul of the connoisseur in search of healing.
It has become rare, the yellow or spotted gentian, from whose roots the precious elixir is extracted. The main reason is once again the bad habit of 'burning'. Since the root contains very little liquid and above all almost no sugar, which is necessary for the production of the distillation mash, the 'gentian distiller' wastes large quantities of this strictly protected plant. (Up to 300 kg for one litre of final product). The preparation process of 'Alpen High' produces exactly the opposite ratio. With one (!) kilogram of roots, we are able to produce up to 300 litres of gentian schnapps. In addition, the bitter aroma of our final product is much more intense and rounded. The preservation of ALL ingredients makes this schnapps the remedy of choice as an aperitif in cases of lack of appetite and as a digestive aid in cases of dyspeptic ailments such as bloating, flatulence and various digestive disorders. It is also excellent for mixing in sophisticated cocktails.

After a cold maceration, digestion or evaporation, an aroma distillation often follows. They also use different hydrolates. The usual distillation after the alcoholic fermentation of the basic products is specifically renounced, as with this method most of the aromas and above all all the precious substances and active principles are eliminated. The alcohol used for grappa and liqueurs is an alcohol made from organic soft wheat, of the best quality, of Italian production, without the aftertaste of the raw material of origin, neutral par excellence. The peculiarity of the Alpen High® - Seppila process is to use the aforementioned alcohol as an organic solvent and with the help of various natural products to create a surprising and tasty fantasy of flavors.
