Description:
Crystal clear straw yellow. The Sauvignon from Kante sets new standards. Broad bouquet on the nose, green notes of fresh Mediterranean herbs, mint, basil and then tarragon, combined with a lemony note of lime and cedar. Fresh and enveloping on the palate, with hints of maritime pine. Strong mineral notes accentuate the karstic, long, elegant and spicy finish.

Sauvignon - Venezia Giulia IGT.
Production area:
The vineyard is located at an average altitude of 250 metres above sea level in the Karst of Trieste, on red soils and limestone rocks characterised by strong drainage. With a planting density of 5,500 vines per hectare, a yield of 1 kg per plant and a single Guyot cultivation system, it has been a symbol of the winery's autochthonous research for 18 years.
Vinification:
The white wine is aged for 12 months in old, leached French oak barriques and then stabilised in steel barrels for 6 months.
Food pairing:
Pairs well with pasta dishes with vegetables, fish tartare and carpaccio, fish and shellfish dishes, fish starters.
Serving temperature:
10 - 12°C.

more than 5 years.

A master of such art, it is with continuous experimentation and innovation that creates products distinguished by their freshness and elegance; characteristics that can be uniquely found within the pureness of nature and its authenticity. The red soil is obtained by digging the bottom of the doline and by grinding the rock of the Karst. A land that thanks to the sea breeze and the bora wind, gives a uniqueness to its products which are distinctly characterized by its acidity, minerality, and salinity. My cellar has been constructed on various levels with a depth of 18 meters down the excavated rock. One uniqueness of these cellars is a large wooden door facing the North-East, allowing the Bora to naturally enter the cellars which together with the natural Karst rock, create an optimum temperature and humidity for the wines.
This makes it an ideal cradle for the selection and aging of the best vintages in bottle.
