Description:
Brilliant straw yellow. On tasting, its brackish note bursts out on the nose. Fresh and intense with aromas of exotic fruit, citrus, grapefruit and cedar; green notes of aromatic herbs, rosemary, bay leaf and mint. Round and persistent in the mouth with a distinct minerality. Mirror of the terroir, karstic and marine.
Grape variety:
Chardonnay - Venezia Giulia IGT.
Production area:
The vineyard is located at an average altitude of 250m above sea level in the Trieste Karst, on red soil and limestone rock characterised by strong drainage. With a planting density of 5,500 vines per hectare, a yield of 1.5 kg per plant and a single Guyot training system, a symbol of the winery's indigenous research for years.
Vinification:
The white vinification involves 12 months of ageing in old, exhausted French oak barriques followed by 6 months of stabilisation in steel.
Food pairing:
Goes well with risottos, fish and shellfish dishes, mature cheeses and white meats.
Serving temperature:
10 - 12°C.
Ageing potential:
more than 5 years.

A master of such art, it is with continuous experimentation and innovation that creates products distinguished by their freshness and elegance; characteristics that can be uniquely found within the pureness of nature and its authenticity. The red soil is obtained by digging the bottom of the doline and by grinding the rock of the Karst. A land that thanks to the sea breeze and the bora wind, gives a uniqueness to its products which are distinctly characterized by its acidity, minerality, and salinity. My cellar has been constructed on various levels with a depth of 18 meters down the excavated rock. One uniqueness of these cellars is a large wooden door facing the North-East, allowing the Bora to naturally enter the cellars which together with the natural Karst rock, create an optimum temperature and humidity for the wines.
This makes it an ideal cradle for the selection and aging of the best vintages in bottle.
