Production area: Cellore, hamlet of Illasi - east-west exposure to sunshine; altitude: 220 meters above sea level - medium texture soil, presence of skeleton.
Vinification: Raisin-drying 70 - 90 days; crushing/destemming, controlled temperature fermentation with inoculation of selected yeasts (saccharomyces cerevisiae). Fefinement for 72 months in american and french oak. Aging for 12 months in the bottle before sale.
Food pairing: However, being a wine persistent in body and personality, it is possible to combine it only with rich dishes, aged cheese, venison, roast, braised meat and stew. Of course, it is the perfect companion of a tipical Venetodish, the "Risotto all’Amarone".
Serving temperature: 16 - 18°C.
Ageing potential: more than 20 years.

Carlo Ferragù's wine cellar is divided into two floors: the upper part, the newest and most modern, has the equipment necessary to carry out the transformation from must to wine step by step; the second part, the oldest, with its thick, low vaulted walls and shiny old wooden doors that shelter and guard the barrels in a suggestive place, especially when lit, because it is almost veiled in a golden blanket; a place where silence reigns and is as sacred as the temperature that permeates every stone.

Colore rosso carminio intenso. Naso speziato con profumi di cannella e legno esotico, piccola frutta di bosco associato a cioccolato e liquirizia. Uvaggio: Lagrein und Merlot
