The Dulbant from the organic village dairy in Prad is a cheese specialty made from 100% goat's hay milk, which is freshly delivered from 4 mountain farms in Upper Venosta. The artisanal soft cheese matures for 5 weeks on spruce boards and is washed and turned every other day with red smear ripening cultures, which defines the slight "goat" taste. The cheese is characterized by its reddish rind and rounded off by its fine melt has a milky, buttery taste.
