Description: 
Fresh banana puree consisting of 90% bananas and pure cane sugar without the addition of colouring agents. 

To make this puree, Ponthier chose Cavendish bananas from Costa Rica as this country has the ideal climate for this fruit to flourish. The banana has 7 ripening stages. Therefore, one chooses the precise ripening stage when buying the fruit to preserve its texture and colour. In banana puree, you will find the delicious and generous flavour of fresh fruit, its length on the palate and its dense texture. Banana puree goes well with other tropical fruits and also with summer berries, both red and black, which are a great combination.

Pour 5cl of banana puree into the bottom of a cappuccino cup, then add espresso. Bring the milk to 65°C in a carafe and pour it into the cup. Sprinkle with cocoa.
