Description: 
Straw yellow with greenish reflections to the eye. On the nose it offers fresh citrusy hints of lime, hints of green apple and hints of pear and apricot, with a hint of rosemary and thyme to complete the picture. The taste is fragrant and savoury, mineral and long lasting. 

Grape varierty: 
Assyrtiko - Santorini PDO 

Production area: 
The vineyards are cultivated on the volcanic soils of the well-known Greek island without irrigation. In order to combat the strong winds, a special method of pruning the vines has been developed, making them resemble nests that grow adjacent to the ground over the years. 

Vinification: 
is fermented in cement vats with indigenous yeasts. 

Food pairing: 
Excellent with shellfish, it is perfect with white linguine with lobster. Also ideal with grilled salmon. 

Serving temperature: 
12 - 14°C. 

Ageing potential: 
more than 8 years. 

Bottle size: 
750 ml - 75 cl - 0,75 lt. 

Allergens: 
wine can contain sulphites.

To trace the beginnings of the history of Volcanic Slopes Vineyards, one has to go back to the 18th century, to the time when the winery was mentioned as a traditional "canava", i.e. an underground cave where wine was stored. Renovated in 2013, what was once a "canava" is now called "Volcanic Slopes Vineyards".
