Description: Ruby red. It opens with blackberries, blueberries and dark berries but, after a few minutes of oxygenation, it evolves, transmitting hints of Mediterranean scrub, bushes, woods and land breezes. On the palate it is balanced but with elegant facets typical of the vines with which it is made. Gentle but firm persistence.
Production area: Over 50 year old vines planted on petrified clay at a height of 80 m above sea level.
Vinification: Fermentation at a controlled temperature. Maceration on the skins takes about 3 weeks. Malolactic fermentation mostly in French containers. The wine matures for 8 - 9 months in a mixture of large wood and barriques (60% new) and for 10 months in the bottle.
Matching: Ideal with game and high quality red meat.
Serving temperature: 16 - 18°C.
Ageing potential: more than 15 years.

The approximately 14 hectares of vineyards of the company, located on terraces ranging from 50 to 200 meters above sea level, seem to almost appear in the middle of the Mediterranean scrub and are organically cultivated, harvesting the grapes in a selected and limited way.
