Description:
The name Tryphon refers to Saint Tryphon, a third-century Christian martyr venerated in Bulgaria as the patron saint of winegrowers and vineyards. The festival of Trifon Saresan is celebrated every year in his honour on 14th February. Slightly spicy with notes of cocoa, dried plants and a hint of tobacco, aroma of red and black fruit, some of which is overripe.
Grape variety:
Cabernet Sauvignon and Merlot - South Tyrol Alto Adige DOC.
Production area:
The wine is composed of half Cabernet Sauvignon and half Merlot. The Merlot grows in Sankt Johann, the Cabernet Sauvignon on the opposite side of the valley, in Magrè.
Vinification:
The grape varieties are vinified separately. The grapes are gently destemmed and fermented in open vats. Fermentation lasts 10-14 days with two ‘pigeages’ per day. The Cabernet Sauvignon undergoes malolactic fermentation in barriques, the Merlot in steel tanks. The Cabernet Sauvignon then matures in new barriques, the Merlot in two- and three-year-old barriques. After twelve months, the grape varieties are blended and, after eight months of ageing in steel tanks, bottled. Six months later, the wine is released onto the market.

This wine is recommended with red meat, savoury appetisers and blue cheeses.

16 - 18°C.

I wanted to make wines that would reflect my ideas about which grape varieties to use, and about the most correct and respectful ways of turning them into wine. I believe that each grape variety should be planted in the environment that best suits it. The producer’s job is to transform the grapes – as naturally as they arrive from the vineyards – into wines that express the characteristics of soil, habitat and growing season these grapes are a fruit of.A respect for these factors precludes all predetermined styles of wine, too often produced following momentary fashions. I am happy when consumers understand a wine to be the result of specific growing conditions, with whatever natural variabilities these may entail. Only then they can appreciate a great wine as being a unique and true expression of a grape, its territory and its producer.
