From some of the oldest Sangiovese vineyards comes the ultimate expression of Bibi Graetz's dream, Colore. Poor, sandy soils, rich in stones and high altitudes create the perfect terroir for a wine capable of telling the true story of Tuscany and its flavours. Only the best barriques will become the Sangiovese Colore. 

"Monumental", there is no better word to describe this vintage of roundness in every single aspect of the wine: elegance, freshness and incredible acidity surprisingly detectable on the nose and from the first sip. Colour 2019 celebrates my 20th anniversary as a vigneron. It has been a great adventure since 2000, full of satisfaction, and now with this vintage I have finally come full circle. In the beginning, I was looking for structure and concentration in my wines, but since 2009, I have realised that "elegance" was the ultimate goal to achieve. In 2019, I finally succeeded. Bibi Graetz. 

Grape varierty: 
Sangiovese - Toscana rosso IGT. 

Production area: 
Vineyards of Siena, Lamole and Vincigliata. 

Vinification: 
Spontaneous fermentation in open barriques. The grapes for Colour were selected from the three most suitable vineyards: Lamole, Vincigliata and Siena. Each vineyard was harvested up to eight times, so as to collect all the grapes at the right point of ripeness. After the first selection in the vineyard, the grapes are selected again once they arrive in the cellar. After destemming, they are softly crushed and then put into open barriques, taking great care to keep each parcel separate from the others. Spontaneous fermentation lasts about two weeks, during which 6-8 manual punching-downs per day are carried out. Once fermentation is complete, using indigenous yeasts and without any temperature control, a week of maceration on the skins is carried out, after which the wine is moved to other barriques, where malolactic fermentation takes place. Each parcel is aged separately for almost 2 years before the final blend is decided.

The Bibi Graetz winery was founded in 2000 on the hill of Fiesole, above Florence, where Bibi, who grew up in a family of artists, fell in love with wine and made it his life choice. 
Bibi is fascinated by the old vines, their finesse, elegance and the purity of the grapes they are able to produce. Today, the company has one of the largest collections of old vines in all of Tuscany.
