

Description:
The Barolo DOCG of the municipality of Castiglione Falletto is a new project in which the vineyards of the municipality have been divided into parcels over the years. Castiglione Falletto, located in the centre of the Barolo zone, has a higher proportion of vineyards facing east to west than the other surrounding villages, which gives its wines a particular typicity, with a perfect balance between power and elegance, with rich and persistent aromas including floral notes, spices and leather. The certificate on the label testifies that the area has been dedicated to viticulture for four centuries, since 1624!

Production area:
The site faces east, west and south-west and the soil consists of clay and limestone and is somewhat sandy.
Vinification:
The Barolo grape harvest takes place around mid-October and is carried out entirely by hand, with the grapes being harvested in small crates. The vines are divided into micro-areas according to the ripeness of the grapes. The grapes are harvested separately, always ensuring perfect unity of the bunches. In this way, several cuvées (varieties) can be produced for each parcel. This separation is also maintained during vinification and ageing of the wine. The fermentation of all micro-cuvées takes place in the steel tanks, followed by maceration with the marc cap submerged: the marc is kept under the lees at a controlled temperature at a depth of around 40-50 cm for a medium to long period of up to 30 days. After maturing in wood for at least 18 months, the various micro-cuvées are skilfully blended and the wine is bottled in June-July, where it remains until the following year before being released onto the market.

Meat, game and mature cheeses. If matured for several years it can be paired with almost any meal.
