Per la produzione del Klosterbitter, l'Amaro dell'Abbazia, vengono utilizzate pigne e germogli di Pino Mugo. L'infusione per 5 - 6 mesi gli conferisce la tipica e netta nota resinosa.

Cantina dell’Abbazia di Novacella
Azienda vinicola dal 1142, la cantina dell'Abbazia di Novacella è annoverata tra le più antiche cantine attive del mondo. Già nel 1177 da papa Alessandro III fu riconosciuto al monastero il possesso dei vigneti nelle vicinanze, da cui è circondata fino ai nostri giorni. Dal fondo valle (600m s.l.m.), si elevano su ripidi pendii fino a 900 metri. Le uve vengono lavorate nella propria cantina per ottenere vini eccellenti. Sia le varietà di uve bianche a Novacella (70%) che quelle rosse a Cornaiano e a Bolzano (30%) vengono coltivate secondo precise regole e vendemmiate nel momento ideale di maturazione. In cantina si cerca con grande attenzione di mantenere il carattere tipico del terroir delle diverse varietà, per produrre vini tipici, di carattere e longevi.
