Description

Description: 
Initially, the wine appears somewhat reductive, followed by a touch of flint and a subtle minerality. With obtimal maturity, citrus and pear aromas follow. The acidity, tannin and well-integrated wood make the wine very easy to drink and delicate. 

Grape varierty: 
Chardonnay - South Tyrol DOC. 

Production area: 
Altkirch - Calcareous soil and 50-year-old vines on double pergola. 

Vinification: 
85% of the grapes are gently pressed, while 15% macerate on the skins for 3 weeks. Fermentation and BSA take place spontaneously and the wines mature for 1 year on the full lees in tonneaux, barrique and cigarillos. From November to May, the wines are stirred by hand (battonage). The wine is bottled unfined and unfiltered. 

Food pairing: 
Ideal with poultry. 

Serving temperature: 
10 - 12°C.

Ageing potential: 
more than 10 years.

Bottle to: 
1500 ml - 150 cl - 1.5 liters, magnum bottle.

Martin Schgraffer studied viticulture in Geisenheim. After his studies, he worked for 7 years in the former cellar cooperative Erste + Neue. He gained further experience in Oregon, USA, among other places.
