The vinification method is extremely traditional and has always been the same since the first harvest. The hand-picked grapes are fermented in glass-enclosed concrete tanks without temperature control and circulated twice a day to keep the pomace cap moist and to obtain a slow extraction of tannins from the skins. After bottling, the wine always carries out malolactic fermentation in glass-enclosed concrete tanks. At the end of the malolactic fermentation, the wines mature in wooden barrels for about two years. Slavonian and Allier oak barrels with a capacity of 5.5 to 18 hectoliters and 225 liter Allier barrique barrels are used for expansion. The wines are not filtered and bottling is only done by gravity.
