Description: 
The vibrant magenta colour characterises this wine as a classic Georgia's Paddock Shiraz from a great vintage. Always delicious and approachable on release, backed by great keeping power if desired. Ripe red raspberries and blackberries, purple plums and a very complex spice fill the big palate that continues to the distinctive tannic finish, soft but firm, balanced by impeccable and vigorous natural acidity. The high alcohol content is so well balanced that it is not noticeable!

Production area: 
The soils derive from basaltic rocks from the Cambrian period that are 500/600 million years old. They are quite rare in the world because of their great age, particularly in Australia. Here at Heathcote they are unusually deep (up to 4 metres), rust red, well drained, gravelly clays on undulating slopes, with good moisture holding capacity. They lie in a narrow, non-contiguous strip between two faults that run from north to south and are generally only a few hundred metres wide. The faults give rise to a complex soil mineralogy.

Jasper Hill is a small, family-owned, organically farmed vineyard in Heathcote, central Victoria, Australia. Their goal is to produce excellent wine, preserving the flavours, complexities and balance of nature using minimal intervention in the vineyards and cellar - to allow the 'terroir' or sense of place of the individual vineyard to express itself to its fullest by interfering as little as possible. 

Jasper Hill wines are grown, produced and bottled entirely in-house from their own grapes, following organic principles. They produce their own compounds and have never used synthetic chemicals on either the vines or the soils, since the vineyards were planted in 1975. 

Their viticultural practices are simple: their own rooted vines (i.e. not grafted onto American rootstocks to give resistance to phylloxera), no irrigation, minimal tillage, natural inter-row mulching leading to a wide biodiversity, very low yields that give depth and intensity to the wines. Only hand pruning the vines and hand picking the fruit can allow us the human connection to our living soil.
