Description:
Barolo DOCG comes from the vineyards of Castiglione Falletto and Barolo and represents the soul of Nebbiolo, with a perfect balance of structure and elegance. With its vibrant ruby colour, this wine presents a bouquet of delicate aromas, including wild strawberries, rose petals, cinnamon and cedar wood. In the mouth, it is characterised by its smooth structure and silky tannins, with flavours that evoke red fruit, vanilla and a subtle earthy note.

Production area:
The exposure is East, West and South-West and the soil is clay and limestone, with traces of sand.

Vinification:
The harvesting of Barolo takes place around mid-October and is done entirely by hand, picking the grapes in small crates. The vines are divided into micro-parts, depending on the ripeness of the grapes. Separate harvests are made, always maintaining a perfect uniformity of the grapes. In this way, several cuvées (types) can be produced for each parcel.
This separation will be maintained in the vinification and ageing of the wine. In the steel vats, fermentation of all the micro cuvees takes place first, followed by submerged cap maceration: the marc is kept submerged at around 40-50 cm, at a controlled temperature for a medium to long period of up to 30 days. After at least 18 months of ageing in wood, the different micro cuvees are skilfully blended and, in June-July, the wine is bottled, where it remains until the following year, before being put on the market.

Meat, game and mature cheeses. If matured for several years it can be paired with almost any meal.

Today the winery has 8 hectares under vine and finds its expression in Achille, the third of Elena and Silvano's four children. Achille has a clear vision: to seek the essence of Barolo through hard work in the vineyards, cultivated on soils that have their own distinctive character.
