Trockner Speck Premium is made from the best pork legs. After careful maturing according to the family recipe and a curing period of 18 - 20 days, the leg is smoked for 7 days at 14 - 18°C and matured at 12 - 14°C for about 9 months.
The difference to traditional speck is that Premium is cured for about 3 months longer and is consequently harder. However, Premium quality does not mean that the bacon is less streaky or has less fat.
Bacon and speck are a 100% handmade natural product, so the content between fat and meat always varies.
As a rule, the whiter (= fat), the more delicate the flavour of bacon and speck.
Note: The ratio to the meat-fat content cannot be estimated in advance for closed - i.e. not cut - sides of bacon.

Pork leg, salt, natural flavors, sugar: dextrose, maltodextrin, preservatives: sodium nitrite, potassium nitrate antioxidant: sodium ascorbate.

When Sebastian Trockner took his father's place in the Trockner butcher's shop in Colma in 1930, all the work was still done by hand, in the most artisanal manner. His meats and sausages were world-famous, but his best-loved product was above all his bacon. All this has not changed to this day, except that this work is now carried out by the brothers Hannes and Thomas, grandsons of grandfather Sebastian, who therefore represent the 4th generation in the production of traditional Trockner bacon, always according to the old, tried and tested method, guaranteeing the excellent quality of the products.
In the daily production of bacon and other meats, as well as in supplying delicatessens and butchers, the company can now count on 20 employees, and of course on their father Richard. In the new, modern retail shop in Colma, Thomas and his mother Monika, together with their staff, sell exquisite specialities such as bacon, smoked sausages, venison and cured beef, hams and various types of salami to their loyal, quality-conscious customers.
