Watles - Small but tough! 

Hand washed and brushed cutting cheese with a fat content on the dry matter of min. 50% irregular holes, compact, aromatic and slightly savory texture. For the beloved Watles, only fresh milk from Burgusio is used. 

For this alone it can bear the name of its own mountain. During the 45-day maturation, the small loaf develops its delicate aroma.

Typical characteristics are the irregular holes and the compact paste. 

Ingredients: 

Whole milk, cultures, rennet, salt.

Burgusio is a picturesque village located in the Upper Venosta Valley below Mount Watles (2557 m) in the upper Adige basin. At the foot of the largest dejection cone in Europe, the Malles moor, is the quiet village of Burgusio, recognizable from the outset as a Romansh agglomeration. The locality developed from a few autarchic farms to assume the typical structure of a Romansh settlement. The peaceful agglomeration is located where the young Adige flows through green and juicy meadows which, thanks to natural cultivation, supply the cows with healthy food. Here each cow still has its own name! 


It is the wonderful nature that fascinates every day in a different way. Pure and good water, a juicy prairie, processed according to a centuries-old tradition and healthy breeding guarantee high quality milk. Fresh milk deliveries, in the morning and in the evening, allow the Burgusio dairy to process efficiently. All member farmers are giving up on genetically modified feed and silage. In this way, consumers are provided with a high quality product - according to modern and hygienic basic rules, but following an old and traditional recipe. The production of aromatic cheese, which must not only be food but also a pleasure!
