Description:
Intense purple-red colour, almost black in the centre with clear violet highlights. Aroma of ripe cherries, berries and chocolate. Juicy and elegantly sweet with powerful tannins and distinct acidic structure in the mouth.
Grape variety:
100% Pinot Noir - South Tyrol DOC Praepositus.
Production area:
Appiano at 350m a.s.l. Soil: Permeable moraine deposits on a porphyritic bedrock with aspect nord.
Vinification:
Fermentation in stainless steel with maceration of the skins for 15 days; Malolactic fermentation and maturation in French Barrique and Tonneaux for 24 months (1/3 new).
Foor pairing:
Goes well with braised game with cranberries, pigeon with chocolate sauce and polenta, grilled sirloin steak with Lagrein reduction.
Serving temperature:
16 - 18°C.

minimum 20 years.

Abbazia di Novacella Winery
Wine estate since 1142, the Abbazia di Novacella winery is among the oldest active wineries in the world. As early as in 1177, Pope Alexander III. confirmed the Monastery’s ownership of vineyards in the vicinity. To this very day, the Abbey is surrounded by terraced vineyards. They extend from the monastic complex, which is located at an altitude of 600 m (2,000 ft.), up the steep hills to an elevation of 900 m (2,950 ft.). The grapes are turned into wines with a strong character in the Abbazia winery.
Both, the white varieties in Novacella (70%) as well as the red ones in Cornaiano and Bolzano (30%), are cultivated according to clear rules and harvested at peak maturity. At the winery, they use the greatest care to preserve each variety’s character that reflects its terroir in order to produce wines that are the most typical, full of character, and capable of developing with age.
