When Sebastian Trockner took over from his father in the Trockner butcher's shop in Colma in 1930, all the work was still done by hand, in total craftsmanship. Its meats and sausages were very famous, but the most popular product was above all speck. All this has not changed until today, except that this work is now carried out by the brothers Hannes and Thomas, grandchildren of grandfather Sebastian, who therefore represent the 4th generation in the production of traditional Trockner speck, always according to the ancient and consolidated method, guarantee of the excellent quality of the products.
