Description: 

Trüffelo from Capriz cheese is a cutting cheese produced with 100% cow's milk from South Tyrolean farms, aged with fine black truffles. During the three-month maturation on spruce wood boards, the cheese is turned upside down every two days and washed with a brush and red crops. 

- External appearance: reddish-yellow rind (Rotschmier cheese)

- Internal aspect: yellowish paste crossed by irregular and sporadic holes from fermentation and spices from pieces of truffles

- Consistency: long pasta with fine crust

- Flavor: milk aroma, delicately sour, truffle aroma

- Taste :: milky-bur flavor
