Description

Description: 
Historic wine that was produced as Chianti Classico Montevertine from 1971 to 1981 and simply as Montevertine from 1982 after leaving the Chianti Classico Consortium. From selected Sangiovese, Canaiolo and Colorino grapes, it matures for two years in Slavonian and Allier oak barrels.

Sangiovese 90% – Canaiolo 5% – Colorino 5% 

Production area: 
Montevertine is located in the heart of the Chianti Classico in the municipality of Radda in Chianti at an altitude of 425 meters. The Montevertine vineyard was planted in 1982 and partially replanted in 2008. The surface is 2.5 hectares and the orientation SE-S;

Vinification: 
Fermentation in concrete barrels for about 21 days. Malolactic fermentation in concrete barrels. This is followed by 24 months of aging in Slavonian oak barrels and 3 months of bottle storage. 

Food Pairing: 
Sausages, grilled meat, pasta dishes, stews, steamed fish. 

Serving temperature: 
17 - 18°C. 

Ageing potential: 
over 10 years.

Only the traditional varieties of the Chianti area are grown in the vineyards of Montevertine: Sangiovese, Canaiolo and Colorino. The vinification method is extremely traditional and has always been the same since the first harvest. The hand-picked grapes are fermented in glass-enclosed concrete tanks without temperature control and circulated twice a day to keep the pomace cap moist and to obtain a slow extraction of tannins from the skins. After bottling, the wine always carries out malolactic fermentation in glass-enclosed concrete tanks. At the end of the malolactic fermentation, the wines mature in wooden barrels for about two years. Slavonian and Allier oak barrels with a capacity of 5.5 to 18 hectoliters and 225 liter Allier barrique barrels are used for expansion. The wines are not filtered and bottling is only done by gravity.
