Description:
Amber coloured grappa. Mild on the nose, with exceptional character, vanilla notes. Unique taste, full, elegant, long finish with nuances of ripe wild berries.
This special Grappa Riserva di Nebbiolo, already matured for a long time (about 2 years) in oak barrels, then rests for many months (more than 24 months) in barrels acquired in Portugal and previously used to age the "Porto Vintage" from some of the most prestigious wineries. The unusual storage in port wine barrels, which is already used for whisky, was tested by us as an innovation for grappa and leads to qualitatively outstanding results. The mild, special aroma and the unique, full, elegant taste with the fruity finish are strongly reminiscent of the port wine that has already matured in these barrels.
Grape variety:
Nebbiolo pomace from freshly picked grapes selected by Sibona at harvest.
Ageing:
Aging for a long period in stainless steel tanks. Then 2 years in medium sized classic oak barrels, and then in port wine barrels for another 2 years.
Pairing:
Dried fruits, walnuts, almonds, desserts and chocolate. Also delicious with mature cheese. Also goes perfectly with a cigar.

Sibona Distillery
The Sibona distillery is located in Alba, a Piedmontese town about an hour's drive south of Turin. It was founded more than 100 years ago and initially burned the fires with the help of a disused steam locomotive, in whose boiler the fires were lit. It wasn't until the mid-20th century that this was replaced with a modern copper flask. The distillery holds "Distillation License No. 1", an old distillation license that is only issued by the tax office if the distillery is a very traditional business with a significant past and the highest level of craftsmanship. This distillation license is also found in the logo on each bottle.
