"Schlössl" mill
The small mill located in Via Sant’Antonio can boast of a history spanning 4 centuries. Since 1815 it has been owned by the Silbernagl family, the only one in Bolzano that still keeps the tradition of the mill alive. In 2004, the two sons Klaus and Paul took over the sixth generation of the master miller Josef Silbernagl. Since then, feed has been a fixed element of the mill's range of products, to which different types of flours have also been added since 1990, in particular wholemeal, spelled, buckwheat and barley flours.
