Eggemoa agricultural dairy
A farm with 15 cows at 1,300 meters above sea level in a secluded valley of South Tyrol, plus the experience of two generations and the courage to create something new: these are the ingredients for the special cheese produced by the Eggemoa of Michael Steiner. All processed by hand, refined with local herbs and produced entirely with raw milk: this is where the best of cheeses is produced.

Eggemoa's story begins in 2001, when Irmgard and Gebhard Steiner decide to turn their cows' milk into cheese. Since childhood, Michael accompanies his parents to work. At the time, he stated that he would love to be a helicopter pilot when he grows up. Until an internship with the well-known Swiss cheese maker Willi Schmid changes everything: now Michael knows that this is his path. He comes home with a cheese-making diploma and a suitcase full of ideas and first of all removes the old range of cheeses produced. Because pepper and paprika do not grow in Selva dei Molini, but larch trees, spruce bark, juniper berries and other herbs. It took patience and even more milk to make Larix, Carbo, Candidum and Silva what they are today: unique cheese specialties.
