Chablis is a small sleepy village. From the first impression it is clear that here, everything revolves around wine.
The estate, which has been managed by Thierry Laffay since 1985, has about 7 hectares of vineyards, entirely planted with Chardonnay. Plant protection products have been eliminated completely and for years. All the grapes from old plants and from important plots are selected by hand in the vineyard, then they are brought to the cellar for processing and fermentation which takes place as much as possible with natural yeasts and only in cement. The producer attaches great importance to harmony in the wine; the classic dark mineral note and the yellow fruit must never be disturbed or hidden by other elements.
