Lechnerhof dairy farm - Patzleiner family
When David Patzleiner put the first white German noble goats in the barn of the Lechnerhof in Braies in the early 1990s, many smiled at him. Today, he is a sought-after producer of cow's and goat's milk cheeses.
The Patzleiner family offers cow's and goat's milk cheeses. "The ratio is 60 per cent cow's milk and 40 per cent goat's milk.  The goat's milk comes from noble German goats, the cow's milk from their own animals. In addition, a neighbour supplies his milk to the farm's dairy. 500 litres of milk are processed in the small farm dairy by David Patzleiner and an employee. "Cheese is produced every day, except Sundays and public holidays. After storage, which varies according to variety, the Lechnerhof cheese specialities are sold outside the farm in the farm shop, to shops and restaurants, and at the Bruneck farmers' market. In addition, two wholesalers are also supplied. One of these is Hansi Baumgartner of Degust, a cheese refiner, with whom David Patzleiner has been working with great success for years.
