Lorenz San Nicolò was actually a successful entrepreneur in Milan, but because his passion for wine never let him go, he has been running the Corahof in St. Pauls with his wife Sissi since 2012 - "as a man of conviction", as San Nicolò himself says.And yet: the San Nicolò family has not completely left urban life behind. The main room of their small winery is dominated by a sparkling Art Nouveau chandelier, which comes from the estate of the time-honoured Hotel Bristol in Merano and matches the rest of the inventory, machines and tractors like a glove. "The chandelier symbolises our love of elegance, the festive and upbeat side of life," explains Lorenz San Nicolò. This is another reason why the chandelier was chosen as the logo of the Corahof in St. Pauls.
It adorns the labels of the wines, which are made from 1 hectare of vines. And their basis in turn is formed by very special glacial sediments. "'Kampferde' is the colloquial term for these fertile soils and, with the south-east exposure of our vineyard and intensive sunlight in the early morning hours, they form ideal conditions for our wine," says the winegrower.
The Corahof's wine is produced in its own cellar, where the grapes - Merlot, Goldmuskateller, Carbernet Franc, Sauvignon blanc and Petit Manseng - are processed cleanly and gently thanks to state-of-the-art technology. The San Nicolòs' minimalist approach also applies to vinification, because: "This is the only way we can bring the valuable flavours of the grapes into the bottle as unadulterated as possible."
