Production area:
Valle Isarco 650 m. a.s.l., stony, lean, skeleton-rich and shallow alluvial soils containing diorite.
Vinification:
Delicate crushing after a short period of contact with the skins, controlled-temperature fermentation in stainless steel tanks, no malolactic fermentation, 10 months of lying on fine lees, followed by 1 year ageing in the bottle.
Ageing potential:
more than 10 years.
Matching:
appetizers, boiled and fried fish, white meat, first courses with vegetables, ideal as an aperitif.
Serving temperature:
10 - 12°C.
