Description: 
Sauvignon Vigna “Castel Ringberg” stands out for its bright yellow color with slightly green reflections. The delicate and inviting bouquet is characterized by floral notes with elderflower and mountain herbs as well as a hint of ripe gooseberry and alpine freshness. With its fruity complexity, extremely elegant structure and minerality, combined with complex potential and its unique harmony, this Sauvignon convinces on the palate.

Production area: 
Vigna "Castel Ringberg", cru vineyard in the hills overlooking Lake Caldaro, in the "Castel Ringberg" estate, in the municipality of Kaltern/Caldaro between 330 and 400 meters above sea level, facing south-east. Vigna “Castel Ringberg” also boasts a multiplicity of soils: the higher perches, climbing into the “Mendel” ridge of the Dolomites, are of 30,000 year old glacial Adige River gravel, while calcareous soils with morainic substrata join loose limestone in gentler lower zones. The moderating influence of the lake and the strong afternoon drying southerly wind, known as “Ora”, also contribute to the balanced, elegant character of the wines. 

Vinification: 
Static clarification through must refrigeration. A part ferments under a controlled temperature of 19°C with extended yeast contact. The rest (approx. 35%) ferments in barriques and large oak barrels. The assembly takes place just before bottling with consequent aging in the bottle. 

Food pairing: 
It is recommended with seafood, fish, pasta dishes and vegetable dishes. 

Serving temperature: 
12 - 14°C.

more than 5 years.
