Description: 
intense straw yellow colour, notes of exotic fruits, bouquet of yellow fruits, slightly spiced scents of nettles and elderberry, full-bodied, well balanced acidity, long-lasting finish. This special Sauvignon Riserva is characterized by secondary notes and an extraordinary aromatic and mineral bouquet. 

Since 1989 the Burgum Novum label represents the premium wines of Castelfeder. These wines are the maximum expression of intense work and care from the vineyard to the cellar, grown in the most prestigious vineyards in South Tyrol. After a careful aging process in small oak barrels for 18 months, all Riserva wines age for another 12 months in the bottle before being released.

Sauvignon - Alto Adige DOC Riserva 

Production area: 
Selected vineyards in the Bassa Atesina region. Limestone gravel soils. 

Vinification: 
Manual harvest, fermentation in stainless steel and tonneau barrels, half of the wine matures in tonneau barrels and the other half in stainless steel, maturation in stainless steel and the bottle for 12 months each. 

Food pairing: 
white meat, grilled vegetables, fish, cheese. 

Serving temperature: 
12 - 14°C. 

Ageing potential: 
more than 8 years.

750 ml - 75 cl - 0,75 lt.

wine can contain sulphites.

The Castelfeder Estate Winery was founded in Egna more than 50 years ago by Alfons Giovanett, but since that time, hardly anything has remained the same. “The product line has been expanded, production has increased, the processes in the winery have been modernized, and the market has become more international,” says Günther Giovanett, who took over the estate from his father Alfons and runs it with his children Ivan and Ines. Today, the Castelfeder Estate Winery encompasses 65 hectares, on which 70 percent is planted with white wine varieties.“The focus is on Chardonnay, Pinot Blanc, Pinot Grigio, and Sauvignon Blanc,” Giovanett explains. With the red wines, the concentration is on Pinot Noir.
