Description:
Colour: greenish yellow. Smell: typical aroma of elderberry, gooseberries, paprika and peach with fine citrus notes. Taste: very strong, racy and mineral in the drink, with a fruity, complex finish.
Grape variety:
Sauvignon - South Tyrol DOC.
Production area:
Vial, Kardatsch, 530 to 570 m a.s.l. Soil: limestone gravel.
Vinification:
Cold maceration on the skins, reduction aging. Cool fermentation at 13 to 18 °C. Several months storage on the fermenting yeast.
Matching:
The typical asparagus wine, which is also recommended as an accompaniment to hearty appetizers and fish.
Serving temperature:
10 - 12°C.
Ageing potential:
more than 5 years.
