Description:
The colour is a beautiful intense straw yellow. Edge Malvasia is sea and iodine. Direct and intense on the nose with its unmistakable fresh and elegant notes, chamomile, broom, lime, acacia honey. Enveloping and full-bodied, the mineral note stands out on the palate, long and persistent the delicate almondy finish. Perfect balance of acidity and minerality, united by the brackish water note.
Grape variety:
Malvasia Istriana - Venezia Giulia IGT.
Production area:
The vineyard is located at an average altitude of 250 m above sea level in the Trieste Karst, on red soils and limestone rocks with strong drainage. With a planting density of 5,500 vines per hectare, a yield of 1 kg per plant and a single Guyot system of cultivation that has been a symbol of the winery's autochthonous research for years.
Vinification:
The white wine is aged for 12 months in old, leached French oak barriques, followed by 6 months of stabilisation in steel.
Food pairing:
Tartar or fish carpaccio, pasta dishes with fish, egg dishes, quiches, fried or roasted fish.
Serving temperature:
10 - 12°C.
Ageing potential:
more than 5 years.

A master of such art, it is with continuous experimentation and innovation that creates products distinguished by their freshness and elegance; characteristics that can be uniquely found within the pureness of nature and its authenticity. The red soil is obtained by digging the bottom of the doline and by grinding the rock of the Karst. A land that thanks to the sea breeze and the bora wind, gives a uniqueness to its products which are distinctly characterized by its acidity, minerality, and salinity. My cellar has been constructed on various levels with a depth of 18 meters down the excavated rock. One uniqueness of these cellars is a large wooden door facing the North-East, allowing the Bora to naturally enter the cellars which together with the natural Karst rock, create an optimum temperature and humidity for the wines.
This makes it an ideal cradle for the selection and aging of the best vintages in bottle.
