Valle Isarco 550 - 650 m. a.s.l. gravelly, skeleton-rich and very deep alluvial soils containing diorite.
Vinification:
Delicate crushing after a short period of contact with the skins, controlled temperature fermentation in stainless steel tanks, no malolactic fermentation, 7 months of lying on fine lees.
Ageing potential:
more than 8 years.
Food pairing:
prawns ,crayfish, lobster, paté de foie gras, dishes au gratin, spicy cheeses, and as an aperitif.
Serving temperature:
10 - 12°C.
